If I’m being honest, I love soup. I always love experimenting with new and different ingredients, so I always end up with odds and ends in the fridge.. I like making different soups out of them.
But like one of my favourite style of soups is like a Tuscan kale & white bean soup.
Start with onion, garlic, salt, pepper, fennel seed, chili flakes.. I’ll throw some carrots, celery, veg or chicken stock, Parmesan cheese rind, white cannelini beans, fresh lacinato / Tuscan kale.. finish off with olive oil, fresh grated parm, extra chili flake, even some fresh parsley. And I have extra picky eaters who eat my food.. so when it’s just me I’ll also add fresh Italian sausage from the butcher
Love a soup like that.
I also love cooking Indian food. And Asian foods. And Italian/French/Spanish foods. But when I cook Italian, I like to cook real Italian, or as real as I can, not Alfredo and shit .. even tho Alfredo is bomb, the way you get it over here is not the real way. Alfredo is no cream, just butter and cheese imulsified
But I can actually cook anything - Indian food is a great base for me, cuz I really understand the importance for layering seasoning in foods, and what should be cooked when, which is important in good cooking in general.
